Ingredients
- 1 lb Ground Beef or Ground Venison
- 1 cup Pure Pumpkin
- 1 cup Shredded Unsweet Coconut
- ½ cup Potato Starch
- 2 Eggs (with shells)
- 1 Banana (sliced)
Directions
Step 1 : Preheat your oven to 350 degrees.
Step 2: Prepare a non-stick baking pan using non-stick cooking spray.
Step 3: In a large mixing bowl, combine all of the ingredients (1 lb ground beef or ground venison, 1 cup pure pumpkin, 1 cup shredded unsweet coconut, ½ cup potato starch, 2 eggs with shells and 1 banana) and mix well.
Step 4: Once combined, gently toss the mixture by hand and break apart with your fingertips to ensure the meat is evenly coated with the other ingredients.
Step 5: Using your hands, form bite size balls by rolling and shaping the mixture into evenly sized meatballs.
Step 6: Place formed meatballs on baking pan, evenly spacing them to ensure each ball is cooked through.
Step 7: Bake in the oven at 350 degrees for approximately 30 minutes.
Step 8: Cool and serve! Store any leftovers in the fridge.
