RECIPE

  • 3 tablespoons finely minced fresh parsley
  • 1 tablespoon finely minced fresh rosemary
  • 1 tablespoon finely minced fresh thyme
  • 2 finely minced cloves of garlic
  • 1 peeled and small diced shallot
  • juice of ½ lemon
  • ¼ cup of olive oil + 1 teaspoon for sautéing
  • rack of lamb cut into individual chops
  • salt and pepper to taste

Serves 2 to 3

Procedures:

  1. In a bowl mix together the parsley rosemary, thyme, garlic, shallot and ¼ cup of olive oil. Set aside.
  2. Next, season the lamb with salt and pepper with both sides and sear them in a large saute pan over medium-high heat with 1 teaspoon of olive oil. They will cook for 2 to 3 minutes per side for a medium internal temperature.
  3. Remove from the pan and serve on a plate with the rosemary and thyme chimichurri sauce over top.
