Why All The Hype Over Green Tripe?

Tripe is the stomach lining from the first 3 of the 4 “stomachs” of ruminant animals, such as cows, sheep or goats. Sounds appetizing, right? Tripe has been consumed by many cultures all over the world for thousands of years and is still used in some notable dishes such as Menudo Soup.

The tripe used in human cuisine is processed and bleached to remove the plant matter and digestive juices that might remain. Green Tripe, only used for animal food, has not been highly processed or bleached, leaving much of the nutritional benefits intact.

Green Tripe has multiple nutritional benefits. Beyond being an excellent protein and omega fatty acid source, the partially digested plant matter that may remain is a great source of vitamins, minerals, antioxidants and substances such as chlorophyll.
