RECIPE

  • ½ tablespoon of minced fresh rosemary
  • ½ tablespoon of minced fresh thyme
  • 2 finely minced cloves of garlic
  • 3 tablespoons of olive oil
  • 1 pound of lamb chops
  • salt and pepper to taste

For the Salad:

  • 1 seeded and small diced cucumber
  • 3 seeded and small diced vine ripe tomatoes
  • ½ peeled and small diced red onion
  • 2 tablespoons of finely chopped fresh parsley
  • ½ cup of finely chopped baby spinach
  • juice of ½ lemon
  • ¼ cup of crumbled feta cheese
  • 2 tablespoons of olive oil
  • salt and pepper to taste

Serves 2

Procedures:

  1. Lamb: In a bowl whisk together the herbs, garlic and olive oil and coat the lamb chops on all sides in the mixture. Marinate in the refrigerator for at least 1 hour or overnight.
  2. Heat a grill pan over medium-high heat and sear the lamb chops until golden brown and until the desired internal temperature is achieved, about 3 to 5 minutes per side for medium-rare.
  3. Salad: Combine the ingredients together in a large bowl. Chill before serving.
  4. Serve the lamb chops over top of the tomato-cucumber salad.
