Healthy, warm, and hearty, this roasted chicken and vegetable stew makes a comforting meal for the people in your household. It combines chicken with carrots, celery, zucchini, squash, tomatoes, leafy greens, and fresh herbs.
Serves 8-10
Heat the olive oil in a large pot over medium-high heat. Add the onion, carrots, and celery. Cook for 8–10 minutes, stirring occasionally, until lightly browned and beginning to soften.
Add the zucchini, yellow squash, tomatoes, rosemary, thyme, pulled chicken, and chicken stock.
Reduce the heat and simmer for 20–25 minutes, or until the vegetables are tender.
Stir in the baby spinach and watercress. Season with salt and pepper to taste, then serve warm.
